Leftovers Pot Pie! Cholent Edition!

Nothing beats a warm hearty meal on a cold & rainy day. Mondays I tend to do some fridge cleaning & see what leftover produce I’m able to use before they go bad. I always overdo my Cholent (Chamin) on the weekends too and finally found a great way to repurpose it! I created these individual pot pies in my favorite mini ceramic @marthastewart dishes.

Of course this recipe varies on which leftover produce you have but this recipe is what I used! Feel free to add your own touches to it ✨

I sautéed onion, cubed pumpkin, shredded carrots, chopped broccoli, corn & squash.

Once golden brown, I added my kishka and beef from my cholent mix.

Then, I added 2 cups of water with consume and a generous tablespoon of flour. I covered and let simmer on low for about 20 minutes.

While it is simmering, roll out your puff pastry dough and begin forming it in your baking dish (it can be one large one, or individual!)

I filled the pastry dough covered dishes with the leftover mixture and covered with another layer of pastry dough. I brushed the top with olive oil and garnished with thyme. Bakes on 375 for 20 minutes (or until golden brown) and serve!!
