Sweet & Savory Pistachio & Fig Salmon


Now that it's the end of Rosh Hashanah (& still tons of holidays to go) I created this recipe combining multiple recipes that I've tried and loved in the past. With trial & error, I created the perfect balance of a sweet & savory salmon. This salmon combined so many amazing flavors. The rosemary, zesty orange, brown sugar, ginger, & pistachios combined perfectly to give it an amazing salty sweet taste. I am accustomed to the traditional take on the Moroccan salmon (ill save that for another time!) but with rosh Hashanah consisting of sweetness for a new year, this was the perfect hit! Not only did it look beautiful on my table, it tasted just as good as it looked! take it from me, the last one to reach for any type of fish while their is meat on the table, that I am beyond satisfied with this dish! You'll need

A large piece of salmon (mine was about 3 pounds)

Pack of Figs (sliced)

Fig Preserves (I love Bon Maman)

1 Cup Pistachios (crushed or grounded up)

1 Orange Sliced

1 cup Orange Juice

Bunch of Rosemary

Minced Ginger (Measurement depends on your liking)

Minced Garlic (Measurement depends on your liking)

1 Cup Brown Sugar

Salt & Pepper

Olive Oil to Drizzle On Top

To Do

Preheat oven to 375.

arrange orange slices on the bottom of your pan. Place the salmon on top.

In a bowl, mix 1/2 cup of the orange juice, pistachios, 1/2 cup brown sugar,garlic, ginger, olive oil, salt and pepper.

Press mixture firmly on salmon steaks or fillets.

meanwhile in a small pot (medium flame), combine 1/2 cup of brown sugar, fig preserves, & about a handful of the sliced fresh figs until it is caramelized.

Add a handful of fresh sliced figs on top of the salmon, & pour the mixture around or on top. lastly, add your rosemary on top!

Bake for 12-15 minutes or until the fish is done.

Don’t overcook the salmon. Use the back of a spatula to press down on the salmon to feel if it’s cooked. If the spongy feeling is gone, and the salmon is firm, then it is cooked!

Remove from the oven immediately and serve.
