vegan cheese on pizza? you've Gouda Brie kidding me! Wether or not you are a fan of cheese, a fan of being vegan, or a fan of eating healthy, healthy vegan cheese is the best invention since sliced bread, in my opinion. I am a HUGE dairy lover, and I will literally have wathdrawals if i dont get my cheese fix daily. Now, my husband and I have a tendancy of 'treating ourselves' to late night UberEats ordering (that darn UberEats added 5 pounds to every person that knows how to use the App Store). Our orders would mostly be Pizza, consisting of lots and lots of cheese. I decided a "Pizza Night" in our home would hopefully add a healthier habit into our weekly eating, and less ordering at 12AM. Now, it sounds quite boring if you ask me, and a nutiritionist wouldn't seem too proud of having Pizza Nights, but if you change up some ingredients, you can have the same delicious taste, yet still being healthy and getting lots of veggies in! Below, you will see the recipe for my Apricot Brisket with Carmelized onions which was actually last nights dinner, so its like a two for one! Almond Flour Pizza Dough Recipe
2 cups Almond Meal/Flour 2 eggs, beaten 2 teaspoons Olive Oil 1 teaspoon salt 1/4 cup Daiya Dairy Free Shredded Mozerella
Preheat oven to 350. Combine all the ingredients (except for the toppings) and mix together. If the dough seems too wet, you can add a little more cheese or almond flour.
Line a baking sheet with parchment paper and put the dough in the center. roll out your dough into the crust thickness or thinness to your liking
Bake the crust at 350 for 12-15 minutes until the edges are golden brown.
Now for the TOPPINGS! -SCROLL DOWN-
As you can see, I didnt go easy on the shredded Brisket. Now, you can use your own Brisket for this recipe, I just had leftovers from last night that I couldn't not use! Here is my Brisket Recipe that I made in the slow cooker!
Slow Cooker Pulled BBQ Brisket Recipe
1 medium-large beef brisket (about 5 pounds)
2 teaspoons garlic powder
2 teaspoons chili powder
2 teaspoons salt
½ teaspoon black pepper
lots and lots of onions
1/4 cup apricots (optional, but adds a nice sweetness)
1 cup Water
1 (18 oz.) bottle Barbecue sauce
3 tbsp Worcestershire sauce
Rub all the spices over the top of the brisket.
Pour 1 cup water in bottom of slow cooker. Place spice covered brisket over water. Worcestershire sauce over top of brisket. Cover with lid and cook on Low heat for 12 hours.
pour barbecue sauce all over the top. Gently stir. Cover with lid and cook another 30 minutes or until sauce is heated through.
Shred the Brisket with a fork, it should be soft and easy to do.
*For those wanting to cook this at a higher temperature for a shorter time, I do not recommend that. Cooking it for the 12 hours or longer makes it extra tender. Cooking brisket in a shorter time will result in a tougher and chewier brisket.

1. Follow the Dough instructions listed above, and once you are ready for the toppings, start with your brisket! Add the brisket on your lightly browned crust,
add sliced tomatoes, chopped onion, chopped basil.
sprinkle daiya cheese generously
add salt & pepper
drizzle a bit of olive oil & balsamic glaze
