Cous-Cous Salad from The Silver Platter


Oh it is true what they say, couscous…so good they named it twice!

Like I mentioned in my previous post, I received my Silver Platter Recipe Book and I couldn't help but make a handful of recipes! This Cous Cous Salad is fresh, light, and hearty! This salad recipe alone is worth the price of admission. I realize that such generalized praise is hardly enough to convince most people to consider purchasing this wonderfully inspired book but I ask you dear readers to check out any one recipe in the book and know with some absurdness that the remaining recipes are just as healthy, delicious and inspired as this one!

As you can see, all of my ingredients are already placed in a bowl, chopped and ready to go. All thats left is to add the cous cous!

Cup of Cous Cous

Cup of Chickpeas //

Cup of Pomegranates //

1/2 Cup Chopped Basil

1/2 Cup Slivered almonds

I mix it all up together, throw in my cooked cous-cous and then I add 1/3 cup of Olive Oil, 1/3

Cup of Lemon, some salt and pepper!

Yes, that is IT! I was pretty shocked when I read the recipe, I was thinking maybe they left out some ingredients. But no, that is all it needed to taste superb!
